The Joys of Cooking with Left-overs

Love being able to cook big meals two or three days a week, then having quick, easy to put together meals on other days. Monday, we had a whole roast chicken, asparagus, mashed potatoes, gravy….. the left-over chicken, asparagus and gravy went into the crock pot with a cup of diced carrots and a cup of diced potatoes and 3 cups of water for soup for today. Or I could have made pot pies. The left over mash got mixed with grated Romano cheese, one egg, and a cup of grated Mexican blend cheese for Potatosahanna last night, to have with pork chops. I’m thinking you could add bacon to that, and cook it for breakfast, too. Basically, that’s 3 meals for up to 4 people for less than $20.
